Creamy poppy seed cake recipe
What we will need:
- 8 egg whites
- 200 g sugar
- 100 g ground poppy seeds
- Grated coconut, to taste
- 6 tablespoons of semi-coarse flour
For the cream:
- 8 egg yolks
- 200 g sugar
- 3 dl milk
- 1 tbsp starch
- 2 tablespoons of vanilla custard powder
- 50 g butter
On top:
- 150 g biscuits
- Half a cup of coffee
- 180 g dark chocolate
- 1 teaspoon of butter
How we will proceed:
1. Beat the egg whites until stiff. Add sugar, flour, poppy seeds, and coconut. Mix to form a dough. Pour the batter onto a baking tray lined with baking paper. Bake in a preheated oven at 180 degrees Celsius for 25 minutes. Then, prepare the cream. Beat the egg yolks with the sugar.
2. Dissolve the starch in milk and add to the yolks. Mix well. Then heat the mixture over low heat. Finally, add the custard powder and stir until the mixture starts to thicken. Add the butter and set aside.
3. Spread the cream over the cooled cake. Sprinkle with crushed biscuits moistened with coffee. The biscuits can be sprinkled using a spoon.
4. Melt the chocolate with the butter and pour it over the cake as icing.
