Today we have prepared a recipe for a delicious delicacy that won us over almost immediately with its taste. Prepare your grandmother’s rustic roast potatoes with vegetables. The recipe is really simple and suitable for vegetarians, but meat lovers can add sausage or sausages.
Grandma’s rustic baked potatoes with vegetables:
What we will need:
- 4 tablespoons sunflower oil + 45 ml
- 1 onion
- 2 medium potatoes
- 400 grams of white shredded cabbage
- 1 carrot
- 3 green peppers
- ½ sweet red pepper
- 1 teaspoon chilli powder
- 2 teaspoons ground black pepper
- 2 teaspoons salt
- 3 eggs
- 1 cup milk
- 1 cup white yoghurt
- 2 and ½ tablespoons plain flour
- 1 packet of baking powder
- a little parsley
- 200 grams of grated cheddar or eydam
How we will proceed:
- First, peel and finely chop the onion. Then fry the onions in four tablespoons of oil. At the next stage, when the onions have turned brown, add the peeled and diced potatoes. Stew and simmer under a lid for about 5 to 10 minutes. Now add the grated white cabbage and the coarsely grated carrots to the mixture. Mix the ingredients well and continue sautéing in the pan.
- At the last stage, add the chopped and cleaned green and red peppers. Finally, season with salt and pepper to taste and simmer, covered, for a few minutes.
- When the vegetables are stewed, remove them from the heat and leave them to cool. Meanwhile, in a large bowl, whisk the eggs with the spices (salt, pepper, chilli) and add the finely chopped parsley.
- Add the baking powder to the mixture, stir in the plain flour, pour in the white yoghurt and milk and make a homogeneous dough.
- Fold in the steamed vegetables and spread everything evenly in a baking dish greased with oil. Sprinkle with grated cheese and bake in the oven for 30 to 35 minutes at 180 °C.
