Zucchini spaghetti with avocado sauce
What we will need:
- 2 pcs zucchini
- 150 g spaghetti
- 1 pcs avocado
- 1 handful fresh basil
- 1 clove garlic
- 2 tbsp pine nuts
- 1 tbsp olive oil
- salt to taste
- ground black pepper to taste
- cheese
How we will proceed:
1. Wash the courgettes and remove the edges. Then, using a spiralizer or a scraper, make spaghetti, lightly salt it and leave it to drain for about 20 minutes.
2. Peel the garlic.
3. Cook the spaghetti in salted water.
4. Halve the avocado, remove the pit and put the flesh in a blender. Add the basil, pine nuts, garlic, olive oil salt and ground black pepper. Mix everything together.
5. Tip the zucchini spaghetti onto a paper towel and pat dry. Then fry them in a pan with a little olive oil over medium heat.
6. Mix the zucchini spaghetti with the classic spaghetti and stir in the avocado mixture.
7. Divide the finished spaghetti between two deep plates and sprinkle with grated cheese – for example, Parmesan.
