Mug carrot cake with nuts

What we will need:

for the dough:

  • 2 cups semi-coarse flour
  • 1 packet baking powder
  • 4 cups grated carrots
  • 1.25 cups granulated sugar
  • 1 packet vanilla sugar
  • 1 cup chopped nuts
  • 1 KL ground cinnamon
  • 1 cup oil
  • 1/2 KL ground ginger
  • 4 pcs eggs
  • 1/2 cup chopped dried cranberries
  • jam or marmalade for spreading
  • butter to grease and flour to dust the baking sheet

for the frosting:

  • 2 cups sour cream
  • 2 cups white yogurt
  • 100 g white chocolate
  • 1/2 cup chopped nuts
  • 1 packet vanilla sugar
  • 2 tbsp butter

How we will proceed:

1. Preheat the oven to 180 °C and grease a baking tray with butter and dust it with flour.

2. Put all the ingredients in a bowl and mix well. First toast the nuts briefly in a dry pan, let them cool and then chop them.

3. Pour the prepared batter onto a baking tray and bake in a preheated oven for 25 to 30 minutes.

4. Melt the white chocolate and butter in a water bath. Then stir in the sour cream and white yoghurt a little at a time. Finally, stir in the vanilla sugar.

5. Spread a thin layer of jam or marmalade over the still warm cake. Allow to cool slightly and spread with cream and sprinkle with nuts.

6. Allow the icing to set before serving. Done!
