Sometimes it really pays to go out of the box and try something completely unconventional. For example, if you love doughnuts and all sorts of sweet fried treats, you should definitely try making them in a savoury way too. You have no idea how delicious these bacon-cheese croquettes are! They are easy to prepare and you can use them as a side dish too. That is, if you really want to shine in the kitchen. Get inspired!
Crispy bacon-cheese croquettes
What we will need:
- 1 kg potatoes
- 150 ml whole milk
- 2 tbsp butter
- 150 g smoked “ostiepok” (or other cheese)
- 150 oravská bacon
- 3 spring onions
- 1 handful of parsley
- a little salt, ground black pepper
for wrapping:
- 150 g plain flour
- 3 pcs eggs
- 300 g breadcrumbs
- 600 ml vegetable oil for spreading
How we will proceed:
1. Clean the potatoes, cut them into cubes and boil them in salted water until tender. Drain, add milk, butter, a little salt and mash to a thick mash with small pieces of potato (not completely smooth).
2. Transfer the mash to a larger bowl and let it cool completely.
3. Cut the bacon into small cubes and fry in a frying pan.
4. When the bacon starts to crisp, add the chopped spring onions and let them fry for 2 to 3 minutes. Take them out and let them cool.
5. Grate the parsnip (or cheese) on a coarse grater and chop the parsley finely.
6. When the mashed potatoes are lukewarm, add all the ingredients – bacon and spring onions, grated cheese and parsley. Mix and season with salt and pepper.
7. Place the bowl in the refrigerator for about 30 minutes and later shape the mixture into oblong croquettes.
8. Roll the croquettes in a triple layer (flour, egg, breadcrumbs) and then fry them in hot oil until golden brown (about 3 minutes).
9. Place the croquettes on a plate with a paper towel and serve, for example, with a bowl of garlic dressing.
