Today’s recipe for blueberry slices with cream and cottage cheese, we borrowed in our Facebook group from our reader. You can also share your favourite recipe with us in this group. But now back to today’s recipe. The preparation is very easy and time-saving. It’s a great treat for an unexpected visitor. Are you salivating yet? Blueberry slices with cream and cottage cheese
What we will need:
- 1 slice of gelatine
- 355 g of plain flour
- 8 g baking powder
- pinch of salt
- 250 g butter
- 350 g semolina
- 4 eggs
- 240 g sour cream
- 300 g blueberries
- 2 lemons
- 250 g soft semi-fat cottage cheese
- 100 ml whipping cream (30%)
- 100 g icing sugar
How we will proceed:
1. Start by letting a slice of gelatin swell in a bowl of cold water. Next, mix together the sifted flour, baking powder and salt. In another bowl, beat the softened butter and 300 g of semolina sugar until foamy. Gradually beat in the eggs one at a time and stir in the flour mixture and sour cream a third at a time.
2. Thoroughly mix 250 g blueberries with lemon zest and 5 g plain flour. Then gently fold into the batter.
3. Spread the batter evenly on a baking sheet lined with baking paper. Bake at 180 degrees for about 25 minutes. Let cool after baking.
4. Blend the rest of the blueberries and add the juice of one lemon to half the quantity. Bring this mixture to a boil. Then set aside and stir in the gelatin.
5. Whisk the cream cheese with the cream, remaining sugar and blueberry gelatin. Mix thoroughly.
6. Once our dough has cooled, we cover it with our cottage cheese-blueberry cream and drizzle with blueberry puree. We can use a skewer to create beautiful ornaments, just like in the picture. Finally, store in the fridge for 30 minutes. We are done!
