Recipe for a fabulous fruit cake:

For the batter we will need:

  • 150 g ground walnuts
  • sugar – 125 g
  • plain flour – 50 g
  • egg whites – 5 pcs
  • salt – 1 pinch

For the cream we will need:

  • milk – 750 ml
  • butter – 200 g
  • sugar – 135 g
  • starch – 60 g
  • lemon juice – 40 ml
  • lemon zest – 1 teaspoon
  • egg yolks – 5 pcs
  • frozen cherries or other fruit – 300 g
  • sugar – 30 g
  • Whipped cream
  • whipping cream – 200 ml
  • icing sugar – 25 g

How we will proceed:

1. Separate the egg whites from the yolks. Put the egg whites in a separate bowl and beat them with a mixer until they are fluffy. Then add the sugar in three stages without stopping beating. We need to get firm peaks. Then mix the ground walnuts with the flour and add this mixture to the egg whites. Gently stir the mixture with a spatula from the bottom up.

2. Line a baking tray with baking paper and spread the prepared batter evenly over it. Place the baking tray in an oven preheated to 180 °C and bake for 20 minutes. Remove the baking sheet from the oven and leave it to cool.

3. In a separate bowl, mix the egg yolks and 50 g of sugar. Pour the milk into a cold saucepan. Add the granulated sugar, lemon zest and starch. Stir and turn on the heat. Heat the milk mixture but do not let it come to the boil. Then add the egg yolks, stir and return to the heat. Cook until the mixture thickens. The fire should be turned to minimum. Then add the lemon juice. Remove from the heat and cover with cling film. Leave to cool.

4. Now put the cherries in a saucepan and heat them up. Add the sugar and bring to the boil. Let stand for a few minutes and strain. Beat the softened butter with a mixer, add the lemon cream and mix. Then mix the cream and icing sugar in a separate bowl. Mix with a mixer. Cut the biscuit and spread one part with the cream. Spread half of the berries and cover with the other sponge. Then repeat the layers. Decorate with whipped cream and sprinkle with chopped walnuts.
