Egg yolk slices with honey and nuts

What we will need:

  • 30 dkg of plain flour
  • 10 dkg icing sugar
  • 1 teaspoon honey
  • 7 dkg butter
  • 2 eggs
  • 1 teaspoon baking soda

Walnut biscuit:

  • 6 eggs
  • 15 dkg sugar
  • 3 tablespoons water
  • 0,5 dl oil
  • 15 dkg of plain flour
  • 1/2 packet of flour. Baking powder
  • 10 dkg ground nuts

Cream:

  • 3 egg yolks
  • 15 dkg semolina sugar
  • 2 packets. vanilla pudding
  • 7 dl milk
  • 10 dkg icing sugar
  • 25 dkg butter

How we will proceed:

1. For the honey dough, mix all ingredients, adding more flour if needed. The dough should be malleable. Roll out into two sheets and bake each one on an inverted baking sheet (25 x 35 cm) at 180 degrees for 8-10 minutes.

2. Divide the eggs for the sponge into whites and yolks. Beat the egg yolks with 10 dkg of sugar, water, oil and nuts. Beat the egg whites with the remaining sugar until foamy. Gently stir the flour and baking powder into the nut mixture – just mix with your hands. Bake on the same baking sheet you used to bake the baking sheets on the reverse side. Bake at 180 degrees for about 25 minutes.

3. Cream: Mix the egg yolks with the sugar, milk and custard powder. From this mixture, cook the custard on the heat and let it cool. Whisk the butter with the icing sugar and add to the cooled cream. Divide the cream in two and leave some of the cream on top.

4. Assemble the dessert: honeycomb, custard, walnut sponge, custard, honeycomb. Spread the cream on top. You can still spread the nuts in sugar on top. Mix 10 kg of walnuts with 1 tablespoon of butter and 1 tablespoon of icing sugar. You can also sprinkle with chopped nuts, chocolate shavings, cocoa or a simple glaze.
