Sour cream cheesecake
What we will need:
For the dough:
- 400 g of plain flour
- 200 g butter or margarine
- 150 g icing sugar
- a pinch of salt
- 2-3 tablespoons milk
- 1 egg
For the cream:
- 600 ml sour cream
- 2 packets. 600 g of sour cream or vanilla pudding
- 150 g of caster sugar
- 500 ml milk
- zest and juice of a small lemon
- raisins (you can soak them in boiling water beforehand)
How we will proceed:
1. Mix the ingredients for the dough and work into a thick, uniform dough. Cover the dough with foil and place in the refrigerator for 30 minutes.
2. Cook the milk, sugar and puddings into a thick pudding. Let cool (stir now and then to prevent a skin forming on the pudding) and then mix with sour cream, zest and lemon juice.
3. Divide the dough into two halves and roll each half into a rectangle (a 20 x 30 cm baking tray). Layer the dough evenly on the cream cream and cover with the other half of the pastry.
4. Place in a well heated oven. Bake at 180 degrees for 25-30 minutes.
5. Let cool, sprinkle with icing sugar and enjoy.
