Dairy Valley dessert recipe:
What we will need:
Tray 24 x 24 cm
PASTRY:
- 300 g wheat flour
- 150 g cold butter
- 0,5 cup water
- 2 tablespoons cocoa
CREAM:
- 2 x 250 g mascarpone cheese
- a little lemon juice
- 1/4 cup sugar
FOAM:
- 500 g fruit (I have frozen strawberries + blueberries)
- 1 jelly
- or you can sweeten as much as you like
- Oreo cookies to decorate the top or your favorite chocolate
How we will proceed:
1. Put all the ingredients for the dough into the bowl of the food processor and knead a smooth, uniform dough.
2. Coat the bottom of a baking tray lined with paper thoroughly with the dough. You can also cover the sides a little. Place in an oven preheated to 180 degrees for about 15 minutes.
3. Blend the fruit to a smooth froth, then bring to the boil, then turn off the burner, add the jelly and mix thoroughly. Allow to cool and concentrate lightly.
4. Pour the cooled, lightly set fruit mousse over the cooled pastry and place the cake in the fridge to allow the fruit layer to set completely.
5. Blend the cooled mascarpone with the juice and icing sugar until smooth.
6. Put the mascarpone on top of the fruit mousse and refrigerate the cake for 2-3 hours. Before serving, decorate the top with crushed biscuits or shaved chocolate.
