Soup does not always have to be broth only. If you like soups, try this wonderfully simple one made with delicious corn. Your kids will love this creamy corn soup too.
Cream of corn soup
What we will need:
- 4 cups frozen corn
- 6 cups vegetable broth
- 1 onion
- 2 garlic cloves
- 1 teaspoon salt
- 1.5 cups whipping cream
- 2 tablespoons butter
- ground black pepper to taste
- ground red pepper to taste
How we will proceed:
1. Peel and finely chop the onion and garlic.
2. Put the butter in a large saucepan and let it melt. Then add the finely chopped onion and garlic – fry until golden brown.
3. Next, add the corn, vegetable stock and salt. Stir and cook for about 15 to 20 minutes.
4. Then blend the soup with a stick blender and stir in the whipping cream.
5. Season to taste, simmer briefly and set aside.
6. You can keep some of the corn and cream to garnish the finished soup.
7. Divide the hot soup among plates, garnish with corn, cream and spices and serve immediately.
