The refreshing cake consists of three layers that will win you over immediately: the delicious cocoa dough, the delicate curd filling and the refreshing gelatine “dot”. This dessert is sure to be a hit, after all, there is no better satisfaction for a pastry chef than an empty tin!
Choux cake from 3 layers
What we will need:
Dough:
- 3 eggs
- 1/4 tsp salt
- 130 g icing sugar
- 1 packet vanilla sugar
- 200 ml milk
- 150 ml oil
- 250 g semi-coarse flour
- 1 packet baking powder
- 2 tbsp cocoa powder
- butter to grease and flour to dust the baking tray
Cottage cheese filling:
- 750 g soft cottage cheese
- 250 g butter
- 1 packet vanilla sugar
- 6 tbsp icing sugar
Orange gelatin:
- 1 litre water
- 120 g granulated sugar
- 4 packets orange fizz
- 2 pcs Golden cob
How we will proceed:
1. Preheat the oven to 180 °C and grease a baking tray with butter and dust it with flour.
2. Divide the eggs into egg whites and egg yolks. Beat the egg whites with the salt until stiff. Beat the egg yolks with the icing sugar and vanilla sugar. Add the milk and oil and mix. Next, add the flour with baking powder and cocoa. Mix well to make a smooth dough. Finally, lightly fold in the egg white snow. Pour the prepared dough onto a baking tray and bake in a preheated oven. Let the baked dough cool.
3. In a bowl, beat the softened butter with the vanilla and icing sugar. Then add the cottage cheese and mix well. Spread the filling over the cooled dough.
4. Orange gelatine. Let it dissolve and bring to the boil. Once boiling, add the golden cobs dissolved in 500 ml of water. Cook, stirring constantly, until thickened. Remove from the heat and allow to cool slightly. Spread the cooled gelatine over the cheesecake filling and set the finished cake in a cool place.
