What we will need:
- 1,5 cup wheat flour
- 200 g butter
- 0,5 cup sugar
- 3 egg yolks
- 1 tablespoon 12% / 18% cream
- 1 teaspoon baking powder
- + 3/4 cup walnuts
- 1.5 kg apples (approx. 1 kg after peeling)
- 2 tablespoons apple pie spice
- 0.5 cup sugar
Meringue:
- 3 proteins
- 0.5 cup sugar
How we will proceed:
1. Put all the ingredients for the shortcrust in the bowl of a food processor and knead a smooth uniform dough.
2. Line the bottom of the mould with baking paper and then cover the dough thoroughly.
3. Place the peeled apples in a large saucepan, add the sugar and spices to the apple pie crust, fry the whole thing over a medium flame until the fruit is soft.
4. Whisk the egg whites with the sugar until stiff.
5. Sprinkle the nuts evenly over the shortcrust pastry and then top with the apples.
6. Place the egg whites on top and put the dough in a preheated oven at 175 °C for about 40 minutes.
