Juicy grandma’s cheesecake
What we will need:
- 1 cup (250 ml) coarse sugar
- 5 egg yolks
- 1 cup oil
- 1 cup milk
- 2 cups semi-coarse flour
- 1 packet vanilla sugar
- 1 packet of baking powder
- pinch of salt
For the filling:
- 800 g cottage cheese
- 250 g semolina sugar
- 2 packets of vanilla sugar
- 1 lemon – use the zest
- 1 packet of vanilla custard
- 5 egg whites
How we will proceed:
1. Mix all the “dry” ingredients in a bowl. In another bowl, whisk the egg yolks and sugar until foamy, add the milk and oil and finally the mixed “dry” ingredients.
2. Mix half of the batter and pour it into a greased and floured baking tin (30 x 40 cm). Bake in an oven preheated to 180 degrees. While one half of the dough is baking, prepare the filling.
3. Beat the egg whites until stiff. In another bowl, mix all the other ingredients and carefully stir in the whipped cream with a fork.
4. When the filling is ready, remove the pastry from the oven, carefully layer the filling on top and top with the other half of the pastry. Bake for another 30 minutes and check with a toothpick.
5. Remove the baked cake, leave to cool in the tin and sprinkle with icing sugar before serving.
