Rolls are visually stunning desserts, and those of us who have made them know that there is nothing impossible about the perfect roll. If the appearance doesn’t convince you, then the idea of a soft sponge cake with the most delicious cream will surely break you. So let’s do it – the marl roulade!

Marlene roulade

What we will need:

for the roll:

  • 6 eggs
  • 4 tbsp semi-coarse flour
  • 4 tbsp ground nuts
  • 6 tbsp granulated sugar
  • 1 KL baking powder
  • 1 pinch salt

for the cream:

  • 50 ml sour cream
  • 150 g icing sugar
  • grated peel of 1 lemon
  • 1 tbsp honey

for decorating:

  • 1/2 cup black tea
  • 100 g chopped nuts
  • 2 tbsp honey

How we will proceed:

1. Preheat oven to 180 °C.

2. Separate the eggs and beat the egg whites with the salt and sugar until stiff. Gradually beat in the egg yolks and finally the sifted flour, baking powder and ground nuts.

3. Spread the dough on a baking sheet lined with baking paper and bake in a preheated oven at 180 °C for 15 to 18 minutes.

4. Once baked, turn the sheet onto a tea towel dusted with icing sugar, remove the paper, cut strips about 1 cm wide from the edges (set aside) and roll up the cake. Leave to cool completely.

5. Mix the sour cream with the sugar, honey and lemon zest.

6. Roll out the cooled dough, drizzle the inside with tea, brush with sour cream and roll up again. Brush the surface with honey and sprinkle with chopped nuts and crumbs from the cut edges of the roll. Leave to set in the fridge.
