Crispy Red Lentil Vegetable Pancakes with Dressings

What we will need:

Mixture:

  • 1 cup red lentils
  • 20g garlic
  • 10g fresh parsley and cilantro
  • olive oil – for frying
  • 1 onion (150g, grated)
  • 1 large potato (300g, grated)
  • pinch of olive oil – for frying
  • 70g carrots (grated)
  • 1 tsp dried cumin
  • 1 tsp dried coriander
  • 1 tsp salt
  • 1 tsp chili flakes
  • 1/2 tsp ground black pepper

Creamy white dressing:

  • 120g sour cream or Greek yogurt (1/2 cup)
  • 120g mayonnaise (1/2 cup)
  • 5g minced garlic
  • salt – to taste
  • black pepper – to taste
  • lemon juice – to taste

Mildly spicy dressing:

  • 2 tbsp chili powder
  • 2 tbsp chili flakes
  • 1/4 cup vinegar
  • salt – to taste

How we will proceed:

1. Soak the red lentils in water for 30 minutes or longer, then drain and set aside.

2. In a pan with heated olive oil, add grated onion, potato, and carrot – stir and fry for 10 minutes over medium heat. After frying, let it cool.

3. In a food processor, roughly blend soaked lentils, garlic cloves, and fresh parsley with cilantro.

4. Mix the resulting lentil mixture into the cooled fried vegetables and season with dried cumin, dried coriander, salt, chili flakes, and ground black pepper. Mix well and refrigerate the mixture for 30 minutes.

5. Creamy white dressing: In a bowl, mix sour cream, mayonnaise, minced garlic, and season with salt, black pepper, and lemon juice – mix well and refrigerate.

6. Mildly spicy dressing: In another bowl, mix chili powder with chili flakes, add vinegar and season with salt – mix well and refrigerate.

7. Wet your hands with water and shape small pancakes from the lentil mixture, then place them in a pan with heated oil – fry them on each side until golden and crispy.

8. After frying, serve them, for example, on a tortilla with vegetables, pour over the prepared dressings, and roll them up, or simply serve them with dressings and your favorite side dish.
