Hearty sausage goulash with potatoes: a quick and filling one-pot classic

When you crave an honest, warming, and wonderfully fragrant one-pot lunch that smells like the best Czech pub, there’s no need to spend hours at the stove. Forget boring soups—this spicy sausage goulash with real lard, chunks of quality sausages, sweet and smoked paprika, tender potatoes, and a kick of chili is a guaranteed hit that will disappear from the table in no time. The secret to success lies in thoroughly sautéing the sausages with caraway, using both types of paprika, and proper thickening.

What you’ll need for a big pot:

For the meat and onion base:

  • Lard: 2 tablespoons (don’t use oil, lard gives the right flavor)
  • Onion: 1 large (finely diced)
  • Caraway: 1 teaspoon ground caraway + 1 teaspoon whole caraway seeds
  • Bay leaf: 1 piece
  • Quality sausages: 500 g (sliced into rounds)

For the spiced and potato layer:

  • Sweet paprika: 1 teaspoon
  • Smoked paprika: 1 teaspoon (gives the goulash an amazing flavor)
  • Garlic: 2 cloves (freshly pressed)
  • Potatoes: 500 g (cut into small cubes)
  • Salt and freshly ground black pepper: to taste

For pouring, thickening, and the spicy finish:

  • Vegetable or meat broth: 1 liter
  • Water: 1 liter
  • Roux for thickening: 2 tablespoons plain flour dissolved in a little cold water
  • Chili peppers: to taste (finely chopped)

For serving:

  • Side: fresh crusty bread or bread dumplings

Step-by-step preparation instructions:

1. Onion base on lard: In a large pan or deep pot, heat 2 tablespoons of good lard and add the chopped onion. Sauté over low heat until the onion is completely soft and lightly golden.

2. Sautéing sausages with caraway: Add the ground and whole caraway, bay leaf, and sliced sausages to the soft onions. Stir occasionally and sauté for about 2 minutes so the sausages release their fat and the flavors blend beautifully.

3. Adding paprika and potatoes: Remove from direct heat for a moment and add both sweet and smoked paprika along with the pressed garlic. Stir quickly so the paprika doesn’t burn, and immediately add the diced potatoes to the pot. Salt, pepper, and mix everything thoroughly.

4. Cooking with broth: Pour in the prepared broth and water, bring to a boil, then simmer gently for about 30 minutes until the potatoes and sausage pieces are completely soft.

5. Thickening with roux: In a cup, mix plain flour with a little water. Slowly pour this roux into the goulash while stirring constantly, so the sauce comes together nicely and gets the right thick consistency. Cook for another 5 minutes.

6. Spicy finish with chili: Finally, stir in chopped chili peppers to taste for the perfect spicy kick. Let the soup bubble for a while longer so the heat spreads evenly.

7. Serving: Serve the finished spicy sausage goulash hot, ideally with a slice of fresh bread or bread dumplings.
