Forget boring meals—this lightning-fast one-pan dinner with honest ground meat, potatoes, zucchini, mushrooms, tomatoes, olive oil, and a crunchy cheese topping is an absolute winner that disappears from the table in no time. The secret to success lies in a clever trick with soaked baking paper, which lets the meat and vegetables steam perfectly in their own juices without drying out.

Ingredients You’ll Need:

The quantities are measured for one standard large deep baking tray or a large casserole dish (ideal for 4 to 5 hungry people).

Meat and Seasoning:

  • Ground meat: 500 g (ideally a 50:50 mix of beef and pork for optimal juiciness)
  • Tomato sauce: 2 tablespoons (or thick sieved tomato purée, also known as passata)
  • Seasoning mix: Salt, freshly ground black pepper, sweet paprika, and dried Provençal herbs (thyme, rosemary, basil)

Hearty Vegetable and Mushroom Load:

  • Potatoes: 2 large (peeled and cut into small cubes or slices)
  • Zucchini: 1 medium (if young, no need to peel)
  • Pepper: 1 pc (red or yellow bell pepper for a nice color contrast)
  • Fresh mushrooms: 100 g (cleaned and cut into quarters or slices)
  • Ripe tomatoes: 2 pcs (diced, they’ll release wonderful juicy flavor)
  • Onion and garlic: 1 large onion and 4 cloves garlic (for a deep aromatic base)

For Moisture and Final Baking:

  • Olive oil: 50 ml (for a Mediterranean touch)
  • Water: 50 ml (to moisten at the start)
  • Hard cheese: 150 g (grated Edam, Gouda or Mozzarella for the final topping)

Step-by-Step Preparation:

1. Quick Prep and Chopping: Preheat your oven to 200°C. Thoroughly wash and clean all vegetables and mushrooms. Peel the potatoes and cut them into small cubes so they bake evenly with the meat. Cut the zucchini, tomatoes, and pepper into similar-sized pieces, slice the mushrooms thicker, finely chop the onion, and slice the garlic cloves thinly. Set all these goodies aside in a large bowl.

2. Layering and Mixing Flavors Right in the Pan: Pile all the chopped vegetables and mushrooms onto a clean deep baking tray or large glass casserole dish. Add the raw ground meat, breaking it up with your fingers into small pieces across the surface. Generously season with salt, pepper, sweet paprika, and Provençal herbs. Spoon two tablespoons of tomato sauce over the top, pour over 50 ml of olive oil and 50 ml of water. Mix everything thoroughly by hand or with two wooden spoons so the meat and seasoning combine evenly with the vegetables.

3. The Magic of Baking Under Wet Paper: Take a sheet of baking paper, scrunch it tightly in your hands, and hold it under cold running water for a few seconds. Gently squeeze out the excess water, carefully spread it out, and cover the entire surface of the tray with it (the damp paper will cling nicely to the edges). Place the tray in the preheated oven and bake at 200°C for exactly 45 minutes, until the potatoes are soft.

4. Cheesy Finish and Browning: After 45 minutes, carefully remove the tray from the oven and take off the hot baking paper. At this stage, all the vegetables and meat will be beautifully soft and full of fragrant, juicy sauce. Generously and evenly sprinkle the entire surface with grated hard cheese. Return the tray to the oven, this time uncovered, and bake for another 15 minutes, until the cheese is completely melted and forms a gorgeous, deeply golden and crispy crust.

5. Resting and Serving from the Tray: Take the finished dish out of the oven and let it rest for about 5 minutes at room temperature before serving. The juices from the meat and tomatoes will settle nicely and the cheese crust will firm up a bit, making it easy to scoop out portions. Serve onto plates using a large spatula.
