What you’ll need for an honest lunch:

For the meat base and sauce:

  • Pork chops: lean slices with or without bone (to taste)
  • Vegetable oil: for sautéing the onions and meat
  • Onion: finely chopped onion for the base
  • Tomato paste: 1 tablespoon
  • Pork broth: for pouring over the meat (alternatively, hot water)
  • Bouillon cube (or stock): a piece for the base + a piece of goulash bouillon for final seasoning
  • Fresh vegetables: peppers and tomatoes (cut into strips or pieces)
  • Spicy and sour accents: 1 hot pepper (for the right gypsy kick) and pickled cucumber
  • For thickening: coarse flour
  • Spices: salt, ground black pepper, and plenty of sweet (or hot) ground paprika

Step-by-step preparation:

1. Sautéing the onions and meat: In a deep pot or roasting pan suitable for the oven, heat the oil and sauté the finely chopped onion until golden. Meanwhile, season the pork chops with salt and pepper on both sides. Add the prepared slices to the onions and quickly sear on both sides to seal in the juices.

2. Adding tomato paste and pouring over: Add 1 tablespoon of tomato paste to the browned meat and sauté briefly to release the aroma. Pour in pork broth so the meat is just covered.

3. Braising in the oven until tender: Add a piece of bouillon cube for deeper flavor. Cover the pot or roasting pan and place in an oven preheated to 180°C. Bake and braise until the pork is perfectly soft and tender.

4. Preparing the gypsy vegetable mix: Once the meat is tender, carefully remove it from the sauce and set aside in a warm place. Add chopped peppers, tomatoes, chopped hot pepper (amount according to your heat preference), and pickled cucumber cut into small pieces to the remaining juices on the stove. Let simmer briefly.

5. Thickening and final seasoning: Sprinkle the sauce with coarse flour and stir constantly, cooking until it thickens. Finally, add plenty of ground paprika and a piece of goulash bouillon for the perfect rich gypsy flavor. Return the tender chops to the sauce to heat through.
