Chicken, potatoes, bacon, mushrooms, onion and vegetables all on one tray – exactly the kind of lunch that doesn’t require complicated cooking or a pile of dishes. All you have to do is chop everything up, season, mix and let the oven do most of the work. The result is a hearty meal where the potatoes soak up the flavors of the meat and bacon, the vegetables become tender and the chicken stays juicy. If you like, you can also add a few slices of sausage or frankfurter.
What You’ll Need
- 700 g potatoes,
- 500 g chicken breast,
- 150 g bacon,
- 150–200 g mushrooms,
- 1 large onion,
- 1 small leek,
- 100 g peas,
- 1–2 tablespoons oil,
- salt,
- black pepper,
- 1 teaspoon sweet paprika,
- 1/2 teaspoon smoked paprika,
- 1/2 teaspoon caraway seeds,
- 1 teaspoon dried garlic or 2 cloves fresh garlic,
- optionally a bit of marjoram or thyme,
- optionally a few slices of sausage or frankfurter.
Step-by-Step Preparation:
1. Preparing the potatoes: Peel the potatoes and cut them into smaller cubes or irregular pieces of roughly the same size so they bake evenly.
2. Preparing the meat: Cut the chicken breasts into larger cubes. Lightly season with salt and pepper.
3. Chopping the other ingredients: Cut the bacon into strips, the onion into wedges, the leek into rounds, and the mushrooms into slices or quarters.
4. Everything on the tray: Place the potatoes, chicken, bacon, onion, leek, mushrooms and peas on a large baking tray. If using sausage or frankfurter, add them as well.
5. Seasoning: Add the oil, sweet and smoked paprika, caraway, garlic, salt and pepper. Mix everything thoroughly so the seasoning and oil coat all the ingredients.
6. Baking: Place the tray in an oven preheated to 190–200 °C and bake for about 45–55 minutes. Stir the mixture at least once during baking.
7. Checking: It’s done when the potatoes are completely soft and the chicken is cooked through. If the potatoes need more time, let the dish bake a few more minutes.
8. Serving: Serve hot straight from the tray. It goes well with pickles, a vegetable salad or a simple yogurt dip.
Final Tip
If you want a more intense flavor, you can add a little grated cheese for the last 10 minutes or drizzle everything lightly with cream. For crispier potatoes, use a larger tray so the ingredients aren’t in a thick layer.
This is exactly the kind of recipe you can easily adapt to what you have at home – swap peas for peppers, add zucchini or use a different type of sausage.
