Potatoes, juicy meat, leek, colorful bell peppers, and mushrooms come together on a single baking sheet with garlic, spices, and oil. The result is a fragrant and hearty meal that doesn’t require complicated cooking or a lot of dishes.
This recipe just needs to be prepared, mixed, and placed in the oven. You can use pork leg or chicken, or even combine different types of meat depending on what you have on hand. The choice of vegetables can also be adjusted to what’s in your fridge.
What You’ll Need
- potatoes,
- pork leg or chicken,
- onion,
- leek,
- colorful bell peppers,
- mushrooms,
- garlic,
- spices to taste,
- oil.
The original recipe doesn’t specify exact amounts, so adjust according to the number of servings and the size of your baking sheet.
Step-by-Step Preparation:
1. Preparing the potatoes: Peel the potatoes and cut them into pieces of roughly the same size. This way, they’ll bake more evenly on the sheet.
2. Cutting the meat: Cut the pork leg or chicken into pieces similar in size to the potatoes. Depending on what you have, you can use just one type of meat or combine both.
3. Preparing the vegetables: Clean and cut the onion, leek, bell peppers, and mushrooms into pieces. Try to keep them about the same size so everything cooks at the same time.
4. Filling the baking sheet: Spread the potatoes, meat, and chopped vegetables on the sheet. Add pressed garlic, spices to taste, and oil, then mix everything thoroughly so all ingredients are well seasoned.
5. Baking: Place the sheet in the oven and bake at 170 °C for about 40 minutes. If you’re using pork, let it bake a bit longer than the chicken version.
6. Mixing: About halfway through baking, gently stir the contents of the sheet. This helps the potatoes, meat, and vegetables cook evenly on all sides.
7. Checking and serving: Before removing from the oven, check that the potatoes are soft and the meat is cooked through. Serve the finished dish hot, ideally right after baking.
What to Watch Out for When Baking
Cut the meat, potatoes, and vegetables into pieces of similar size so everything bakes as evenly as possible. It’s also important to stir halfway through baking, which helps everything brown nicely on all sides.
The cooking time may vary depending on the meat you use. Pork needs longer baking than chicken, so adjust the time accordingly and always check that the meat is done before serving.
How to Change Up the Recipe
This is a practical way to use up leftover vegetables from the fridge. You can add zucchini or eggplant to the basic mix, or replace the meat with sausage. You can also combine different types of meat depending on what you have available.
A favorite spice mix for meat is enough for seasoning. For an extra touch, sprinkle grated cheese over the dish at the end of baking and let it finish briefly in the oven.
How to Store the Finished Dish
Store leftover meat, potatoes, and vegetables in a sealed container. They’ll keep in the fridge for 2–3 days. The dish is also suitable for freezing, ideally divided into individual portions for easy reheating later.
