Preparation is simple—just slice all the ingredients ahead of time and mix the sauce and water with starch in separate bowls. Then, cook the meat and vegetables step by step in a single pan, thicken the sauce, and finish with garlic and spring onion greens.

What You’ll Need

For the marinated meat:

  • 300 g beef shoulder,
  • 1/2 tsp curry powder,
  • 1 tsp turmeric,
  • 2 tsp potato starch,
  • 1 egg,
  • ground black pepper to taste,
  • 1 tbsp light soy sauce.

For the vegetables and finishing:

  • mung bean sprouts to taste,
  • 1/2 onion,
  • 3 spring onions,
  • a piece of white cabbage,
  • 1/2 red bell pepper,
  • 1 small parsley root,
  • 1 carrot,
  • 4 button mushrooms,
  • 3 garlic cloves,
  • oil for frying,
  • 1.5 dl water,
  • 2 tsp potato starch.

For the sauce:

  • 1 tbsp rice wine,
  • 3 tbsp Exotic Food sweet chili sauce,
  • 2 tbsp teriyaki sauce,
  • 2 tbsp oyster sauce,
  • 1/2 tbsp fish sauce,
  • 1/2 tbsp sesame oil,
  • 1 tbsp honey.

For the side:

  • jasmine rice.

The original recipe does not specify exact amounts for jasmine rice, mung bean sprouts, white cabbage, oil, or pepper, so adjust these to suit the number of servings and your taste.

Step-by-Step Preparation:

1. Slicing and seasoning the meat: Cut the beef shoulder into thin strips. Add curry powder, turmeric, two teaspoons of potato starch, a cracked egg, ground black pepper, and light soy sauce. Mix everything thoroughly and let the meat rest in the fridge for a while.

2. Preparing the vegetables: Meanwhile, slice half an onion, the spring onions, a piece of white cabbage, half a red bell pepper, the small parsley root, carrot, and mushrooms. Finely chop the garlic and set aside the green parts of the spring onions for final seasoning.

3. Mixing the sauce: In a small bowl, combine the rice wine, sweet chili sauce, teriyaki sauce, oyster sauce, fish sauce, and sesame oil. Add the honey and mix well so all the flavors blend together.

4. Preparing the thickener: In a separate container, pour 1.5 dl of water and add two teaspoons of potato starch. Mix well to avoid lumps, and stir again briefly before use if needed.

5. Searing the meat: Heat oil in a pan and add the marinated beef strips. Fry the meat over medium heat until browned, stirring occasionally so the strips cook evenly.

6. Adding the vegetables: Gradually add the sliced onion, cabbage, bell pepper, parsley root, carrot, mushrooms, and the white parts of the spring onions to the browned meat. Mix well so the vegetables combine with the meat and heat through evenly.

7. Seasoning and thickening: Pour the prepared sauce into the pan and mix thoroughly. Finally, add the mung bean sprouts and pour in the water mixed with potato starch, which will thicken the sauce and bring all the ingredients together.

8. Finishing and serving: At the end of cooking, add the chopped garlic and green parts of the spring onions. Serve the finished spicy beef strips with vegetables alongside prepared jasmine rice.

How to Make Pan Cooking Easier

Slice all the ingredients before heating the oil. Also, prepare the sauce and the water-starch mixture in advance, because during frying you’ll be adding each part of the recipe step by step without unnecessary delays.

Keep the garlic and green spring onion tops aside until the very end. This way, they’ll keep their strong flavor and complement the finished meat and vegetables just before serving.

How to Use Potato Starch

Potato starch is used twice in this recipe. First, two teaspoons are added directly to the meat along with the egg and spices; the other two teaspoons are mixed into 1.5 dl of water and used to thicken the sauce at the end.

Stir the mixture again before pouring it into the pan, as the starch can settle at the bottom. Add it only after the sauce and mix it thoroughly with the meat, vegetables, and mung bean sprouts.

Final Tip

Serve the beef strips immediately after finishing, together with jasmine rice. Adjust the amount of ground pepper and mung bean sprouts to your taste, while keeping the other sauce proportions as in the recipe.
