Preserve the taste and smell of summer with a delicious homemade tomato sauce! Tomato season allows us to make really tasty stocks of leche, ketchup or mild sauces for pasta or meat, and although the season is still quite a way off, we’ve shone the spotlight on a classic tomato, onion and garlic sauce that’s great even out of the season of fresh, sun-drenched tomatoes!
Classic tomato sauce with onion, garlic and basil
What we will need:
- 2 tbsp olive oil
- 1 onion
- 3 cloves garlic
- 8 pcs medium tomato (or 2 cans peeled tomatoes)
- salt, ground black pepper, sugar to taste
- 1 handful fresh basil or oregano
How we will proceed:
- First, peel the tomatoes: cut each one crosswise and place them in boiling water for about 2 minutes.
- Then simply remove the skin and cut the tomatoes into larger cubes and set them aside in a bowl.
- Heat the oil over a medium heat and add the onion and garlic. Fry for about 3 minutes.
- When the onions have softened, add the tomatoes and cook over a low heat until they start to break down – 15 to 20 minutes.
- Before the end of cooking, season the sauce with salt and pepper and add a teaspoon or two of sugar if necessary to balance the acidity of the tomatoes.
- Remove the sauce from the heat and stir in the chopped basil or oregano leaves.
- The sauce can be made in bulk during tomato season and bottled or frozen for the winter months.
