The secret to its success lies in the layer of ladyfingers, which absorbs excess fruit juice, and in pouring the still-warm pudding directly over the fruit.

What you’ll need for a large baking tray:

For the crispy pastry base:

  • Puff pastry: 1 pack (pre-rolled or in one piece, divided in half)

For the fruit and ladyfinger layer:

  • Ladyfingers: 1 pack
  • Apricot compote: 1 can (drained apricot halves)

For the rich pudding layer:

  • Whole milk: 1 liter
  • Vanilla pudding powder: 3 packets
  • Granulated sugar: 4 tablespoons

For the final decoration:

  • Powdered sugar: for dusting the top

Step-by-step preparation:

1. Preparing the pastry and base layer: Roll out the puff pastry on a floured surface and divide it into two equal halves. Carefully transfer the first sheet onto a baking tray lined with baking paper. Evenly arrange the ladyfingers (rounded side down) on the pastry to cover almost the entire surface. Then tightly place the drained apricot halves from the compote side by side on top of the ladyfingers.

2. Cooking a thick vanilla pudding: Mix the granulated sugar and three packets of vanilla pudding powder thoroughly into one liter of milk, making sure there are no lumps. Cook a very thick pudding in the usual way, stirring constantly. Important: Let the pudding cool just slightly and, while still warm, carefully and evenly pour it over the arranged apricots and ladyfingers.

3. Assembling and baking: Place the second sheet of puff pastry over the hot pudding layer. You can gently press the edges of the pastry around the perimeter to seal the filling and prevent it from leaking during baking. Bake in a preheated oven at 180°C for about 25 to 30 minutes until golden.

4. Thorough cooling and serving: Let the baked cake cool completely to room temperature before slicing, then chill it in the fridge. This is absolutely crucial so that the pudding layer sets properly and the dessert doesn’t fall apart when portioning. Before serving, generously dust the top with powdered sugar.
