Two sheets of puff pastry, grated apples, pudding, and quark. With just a few simple ingredients, you’ll bake a wonderfully moist cake with a creamy center, cinnamon apples, and a crispy golden layer on top. The preparation is surprisingly easy—no need for complicated kneading or rolling. Simply layer everything in a baking dish, and let the oven do the rest.
What You’ll Need
For the cake:
- 2 sheets of puff pastry,
- 700 g coarsely grated apples,
- cane sugar to taste – the original recipe uses 3 tablespoons,
- 1 teaspoon cinnamon,
- 1 egg for brushing.
For the pudding layer:
- 2 vanilla protein puddings,
- 500 ml milk,
- 3 tablespoons cane sugar.
For the quark layer:
- 2 packs of semi-fat quark,
- 1 egg,
- 2 tablespoons honey,
- 1 tablespoon starch.
Step-by-Step Instructions:
1. Preparing the apples: Coarsely grate the apples and mix them with cane sugar and cinnamon. Adjust the amount of sugar to the sweetness of your apples.
2. First pastry layer: Place one sheet of puff pastry on the bottom of a baking dish and adjust as needed to cover the entire bottom.
3. Apple layer: Evenly spread the prepared grated apples with cinnamon and sugar over the pastry.
4. Preparing the pudding: Cook a thick pudding from the vanilla puddings, 500 ml milk, and cane sugar according to the instructions on the package.
5. Pudding layer: Pour the still-warm pudding evenly over the apples and gently spread it over the entire surface.
6. Quark filling: Mix the semi-fat quark with the egg, honey, and starch until smooth.
7. Spreading the quark: Carefully spread the quark mixture over the pudding layer.
8. Covering the cake: Place the second sheet of puff pastry on top. Brush the surface with beaten egg so it bakes to a beautiful golden color.
9. Baking: Place the cake in an oven preheated to 180°C and bake for about 45 minutes, until the top is golden and crispy.
10. Slicing: Let the cake cool for a while after baking so the pudding and quark layers can set a bit, making it easier to slice.
Final Tip
If you use tart apples, you can add a bit more sugar. For sweeter varieties, you don’t need to sweeten the apple layer much.
The combination of juicy apples, vanilla pudding, and smooth quark makes the cake beautifully moist, while the puff pastry creates a crispy golden top layer.
