Potato-bacon frittata
What we will need:
- 2 tbsp olive oil
- 70 g bacon
- 1 large onion
- 3 pcs medium potatoes
- 6 pcs eggs
- 50 g parmesan
- salt, ground black pepper, ground sweet paprika to taste
How we will proceed:
- Heat the oil in a cast iron pan.
- Add the chopped bacon and fry it.
- Then add the onion, cut into thin strips and fry until golden brown.
- Finally, add the potatoes cut into thin slices or small cubes and fry everything together over a medium flame for about 10 minutes.
- Preheat the oven to 200 °C.
- Meanwhile, whisk the eggs with the grated Parmesan in a bowl. Season lightly with salt and pepper and add a little paprika.
- Pour the egg over the potatoes and bacon in the pan and place the pan in the preheated oven for approximately 30 minutes.
- Garnish the frittata with chopped parsley, let it cool directly in the pan for about 10 minutes, then cut it into triangles and serve.
