Chicken in curry sauce – Fragrant goodness with a hint of exotic

Today we have prepared a recipe for chicken in curry sauce that will transport you to exotic India. With steamed rice, exotic spices and coconut milk, these ingredients form the perfect combination of flavours.

Chicken in curry sauce

What we will need:

  • 500 g chicken breast
  • 1 can coconut milk
  • 1 large onion
  • 2 pcs garlic
  • 2 tbsp oil
  • 1 KL crushed cumin
  • 1 pk bay leaf
  • 3 pcs cardamom
  • 1/2 KL chilli flakes
  • 1 KL turmeric
  • 1 KL ground coriander
  • 1 KL grated ginger
  • 1/2 KL salt
  • 1 handful fresh coriander

How we will proceed:

1. Heat the oil in a deep pan and briefly fry the spices: cumin, bay leaf, cardamom, chilli and coriander.

2. Then add the onion, cut into thin strips and fry until soft.

3. Then briefly fry the crushed garlic and grated ginger in a pan and season everything with salt.

4. Add a little water and cook until a thick paste forms, then stir in the chicken cut into larger pieces. Simmer for 15 to 20 minutes, basting occasionally with a little water.

5. Finally, pour in the coconut milk, season with salt and simmer for about 5 minutes to thicken the sauce.

6. Finally, sprinkle with chopped coriander and serve with steamed rice.
