Roast neck of pork on vegetables with wine sauce

What we will need:

  • 1 kg pork neck (boneless)
  • 6 pcs large potatoes
  • 2 pcs carrots
  • 2 pcs onions
  • 1 pcs capers
  • 4 cloves garlic
  • 1 tbsp oil
  • salt, ground black pepper, bay leaf, cumin to taste

for the sauce:

  • 1 dl white wine
  • 2 tbsp butter
  • 1 handful of parsley

How we will proceed:

1. Cut the onion into rounds and put it in the bottom of a baking dish (with a lid).

2. Season the meat with salt and pepper, rub with crushed garlic and place on top of the onion rings.

3. Place the potatoes, carrots and capers, cut into larger pieces, around the meat. Season the vegetables lightly with salt, add a little cumin and drizzle with oil.

4. Finally, add a few bay leaves to the baking dish, cover and place in a preheated oven for approximately 90 minutes.

5. After stewing, drain the contents of the roasting tin, return the meat to the oven and roast uncovered for about 20 minutes, basted with a few spoonfuls of the fat.

6. Use the remaining fat and wine to make a sauce in a saucepan. When the volume is reduced by half, set it aside and stir in the butter and chopped parsley.

7. Serve the slices of meat covered with the sauce and serve the stewed vegetables as a side dish.
