Potato relish with egg yolk and spring onions
What we will need:
- 200 g peeled potatoes
- 50 g onions
- 1 egg
- 15 g spring onions
- salt
How we will proceed:
1. Scrape the potatoes and grate them on a fine grater. Pour cold water over the potatoes, season with salt and leave to rest for 10 to 15 minutes. Then pour all the water into another container, but do not pour it out.
2. Squeeze the potatoes well so that as little water as possible remains. Allow the water to stand for 10 minutes until a visible layer of potato starch has formed on the bottom of the container. You will need the starch later, so don’t throw it away.
3. Cut the onion in half and soak it in cold water for 10 minutes to remove the bitterness. Wring out the onions well and cut them into small pieces.
4. Carefully drain the water from the pot the potatoes were in so that only the starchy layer remains. Mix the potatoes with the onion, starch, chopped green onions and egg.
5. Place the potato mixture in a hot non-stick frying pan, spread it out evenly and fry, covered, over a medium heat for about 6-7 minutes on each side.
