You know the classic potato pancakes well. But have you heard of stuffed ones? Warm, crispy, full of melty cheese. Stuffed potato pancakes are not rocket science and anyone can make them. Great idea for a quick dinner.
Potato pancakes stuffed with cheese
What we will need:
potato dough:
- 1 kg potatoes
- 1 onion
- 3 pcs garlic
- 3 tbsp plain flour
- 2 pcs eggs
- to taste salt, ground black pepper, ground paprika, marjoram
- a little oil or lard for spreading
cheese filling:
- 200 g cheese in a casing
- 100 g smoked cheese
- a little milk
How we will proceed:
1. Grate the potatoes on a coarse grater.
2. Mash the grated potatoes lightly in your hands to get rid of excess water and place them in a larger bowl.
3. Grate the onion, mash the garlic and add the flour and whole eggs to the potatoes.
4. Then add salt and spices and bake a test pancake in the hot fat, seasoning the dough if necessary.
5. Make a spreadable cheese filling with the spreadable cheese, grated smoked cheese and a little milk (1 to 2 tbsp).
6. Then bake the stuffed pancakes in a frying pan by shaping the pancake with a spoon in the hot fat. While it is frying, spread a little cheese filling on the bottom and then layer the potato dough on top again. Carefully turn the pancake over and fry the other side.
