Coconut goodness from the tin
What we will need:
- 500 g cocoa biscuits
- 500 g cream cheese (mascarpone)
- 300 ml full-fat cream
- 200 g chocolate
- 150 g sugar
- 100 ml milk
- 50 g grated coconut
- 10 g vanilla sugar
How we will proceed:
1. Place the cream cheese in a deep bowl, add the sugar and vanilla sugar. Using an electric beater, start beating the mixture at low speed to incorporate the sugar into the cream cheese. Then increase the speed and continue beating until the mixture is creamy smooth.
2. Now add the full-fat cream to the mixture and continue beating until the ingredients form a homogeneous mixture.
3. Then add the grated coconut to the bowl and mix thoroughly with a spatula.
Prepare a square cake tin with removable sides and arrange the cocoa biscuits side by side in the bottom of the tin. Then pour half of the cream over the biscuits and spread it evenly over the biscuits.
4. Once you have finished, place a second layer of cocoa biscuits on top of the cream and spread the other half of the cream on top of the biscuits again.
5. Place the prepared cake in the refrigerator for 30 minutes.
6. In the meantime, break the dark chocolate into a deep bowl, pour the milk over it and then place it in the microwave where it will heat for about 5 minutes until it melts.
7. Stir the two ingredients until they are smooth.
8. When the cake is sufficiently cooled, remove it from the fridge and pour the chocolate frosting over the entire surface of the cake. Then place the cake back in the refrigerator for another 30 minutes to allow all the layers to set and the cookies to be moist enough.
