Smoked chicken bake with potatoes and bacon:
What we will need:
- 3 smoked chicken thighs
- 6 medium potatoes
- slices of English bacon
- 1 onion
- 4 garlic cloves
- 1/2 red pepper
- salt, pepper, your favourite spices
- 3 slices of butter
- lard to grease the baking dish
- grated cheese of your choice
How we will proceed:
1. Cut the bacon and red peppers into strips, the onion into halves, and the garlic into slices. Scrape the potatoes and cut them into thin slices.
2. Grease a baking dish with lard and stick the bacon strips on the bottom and sides.
3. Place a layer of sliced potatoes on top of the bacon, season with salt and your favorite spices (I used Argentine). I had leftover lentils from a jar in the fridge, I mixed that with a little cream and spread half of that mixture on the potatoes. Put the first half of chopped onions, peppers, garlic … second layer again potatoes and repeat. I put chicken thighs on top, a slice of butter on each thigh and put them in the oven preheated to 180 degrees for an hour and a half.
4. At the end of baking I sprinkled grated cheese (it doesn’t have to be, but I had some left over from risotto so I used it that way). Bake uncovered … We wish you a good taste.
