Plum balls of potato dough smeared with butter, sprinkled with poppy seeds and sugar. One of the best traditional dishes. Dessert or main course? I remember in my house, dumplings were always cooked as a sweet main dish. When I make them, I always think of my grandmother. She used a simple recipe to make the dough and I’m happy to share it with you.
Traditional plum balls from potato dough
What we will need:
- 800 g potatoes
- 300 g semi-coarse flour
- 1 egg
- 1 pinch salt
- 20 pcs smaller plums
- melted butter to taste, breadcrumbs, poppy seeds, nuts, granco, icing sugar
How we will proceed:
1. Boil the potatoes in their skins. Once cooled, peel and mash or finely grate them.
2. Bring a large pot of lightly salted water to the boil.
3. On a work surface, mix the potatoes, flour, eggs and salt. Make a non-sticky dough. Roll it out in sections to about 3 mm and cut out rounds (using a glass or cup) about 6 cm in diameter.
4. Place a sliced and drained plum on each round. Close them and roll them into a ball between the palms of your hands.
5. Cook the balls in salted water until they all float to the surface. Then boil for a few more minutes to ensure the dough is not raw.
6. Serve sprinkled with sugar and topped with toasted breadcrumbs or ground poppy seeds, nuts… and topped with melted butter.
