Fancy a tasty and filling soup, but hunger won’t let you think too long? We offer you a great tip – pea soup with garlic toast and goat cheese! A delicate, beautifully green soup, which thanks to the tasty side dish will take the role of the main course!
Pea soup with garlic toast and goat cheese
What we will need:
- 300 g frozen peas
- 2 pcs potatoes
- 2 tablespoons oil
- 1 shallot (or ½ onion)
- 1 litre vegetable stock
- 1 handful of parsley
- salt, ground black pepper, mint to taste
How we will proceed:
1. Heat the oil in a frying pan, add the chopped shallots and fry until golden.
2. Add the peas to the onions, add the diced potatoes, pour in the stock and cook everything together until soft, about 20 minutes.
3. In the meantime, toast the bread in a dry frying pan until golden brown and spread each toast with a clove of garlic and a layer of goat’s cheese.
4. Remove the soup from the heat, blend with an immersion blender until creamy, season with salt and pepper. Finally, stir in the chopped parsley and fresh mint to taste.
5. Serve the prepared garlic toast and cheese with the hot soup.
