Dinner ready in 20 minutes – Quick pie with bacon and asparagus

Do you like asparagus? We certainly do! Asparagus contains many vitamins, trace elements, folic acid and iron. It is also a rich source of fibre. Due to its low calorie and carbohydrate content, it is also an ideal aid in weight loss diets. Today we’re going to prepare a quick asparagus pie, which we’ll enhance with bacon. Here we go!

Quick pie with bacon and asparagus

What we will need:

  • 3 eggs
  • 150 ml milk
  • 50 g grated Parmesan cheese
  • salt to taste, ground black pepper, ground sweet paprika
  • 1 KL lemon zest
  • 5 tbsp plain flour
  • 1/2 bunch green asparagus
  • 70 g Orava bacon
  • a little oil

How we will proceed:

1. Preheat the oven to 220 °C.

2. Beat the eggs in a large bowl, pour in the milk and add the Parmesan cheese.

3. Whisk everything together and season the mixture with salt, pepper, ground paprika and lemon zest. Whisk again.

4. Finally, add the flour and make a liquid dough, which you set aside for the time being.

5. Cut off the bottom woody parts of the asparagus and cut the rest into pieces about a centimetre long. Cut the bacon into small cubes. Heat about a tablespoon of oil in a frying pan (suitable for the oven), add the bacon pieces and fry them until golden brown.

6. Later, add the asparagus, which will not need more than a minute of browning, and then pour the prepared batter evenly over everything.

7. Place the baking dish in the preheated oven and bake for about 10 to 12 minutes, until the pie is beautifully golden.

8. The beautifully puffed cake gradually loses volume when removed from the oven, but it loses none of its fantastic flavour.
