Excellent recipe for the best lentil soup! I’m sure you will love it!

Lentil soup

What we will need:

  • green or brown lentils (less brittle than red)
  • 1 onion or leek
  • 3 cloves of garlic
  • 1 cm chopped ginger
  • spices to taste: ground ginger, coriander, cumin, turmeric (for those who don’t like foreign smells, none of this is necessary)
  • 1 l of homemade chicken or lamb stock
  • 1 salt of cooked or fresh tomatoes (depending on the season)
  • 1 carrot (optional)
  • chopped fresh coriander
  • lemon juice to taste

How we will proceed:

1. Fry the onions on a low heat for about 20 minutes or longer. Add the chopped garlic and ginger.

2. If you are using it, add the spices, otherwise you can just salt and pepper – salt is not added at the end, the important thing is that the dish is cooked with salt.

3. Add the rinsed and drained lentils and pour in the soup stock. Decide here how thick it should be. Cook for 20 minutes.

4. Add tomatoes in any form, of course fresh or home cooked tomatoes are best. Cook over low heat for another 30 minutes until the lentils are tender. Add hot peppers to taste, of course.

5. Serve with mixed greens, lemon juice and cilantro (maybe parsley, but cilantro is somehow better because it already has the citrus flavor needed to balance all the flavors).
