Raspberry dessert

What we will need:

  • biscuits (180 g)
  • 400 g raspberries (fresh or frozen)
  • 3 raspberry jelly (each per 500 ml of water)
  • 4,5 cups boiling water

Cream with vanilla:

  • 200 ml 36% cream, chilled
  • 125 g chilled mascarpone cheese
  • 1 tablespoon icing sugar
  • 1 vanilla sugar (16 g)

How we will proceed:

1. Dissolve 1 jelly in 1½ cups hot water, add the biscuits and stir. Dump the biscuits onto a baking sheet lined with baking paper and let cool.

2. Dissolve 2 raspberry jellies in 3 cups hot water. Cool, stir in raspberries (can be frozen, do not thaw beforehand). Set aside in the refrigerator until the jelly thickens slightly. Put the set jelly on top of the dough, align and chill in the fridge.

3. Prepare the cream immediately before spreading on the cake. Place all ingredients in a bowl. Whisk until a thick cream forms. Spread the cream on top of the jelly and smooth out. Store in the refrigerator.
