What we will need:

To prepare the dough we will need:

  • 500 g of plain flour
  • 200 g butter or palmarin
  • 60 g coarse sugar
  • 4 egg yolks
  • 1 packet of vanilla sugar
  • 1 teaspoon baking soda or baking powder
  • 3 tablespoons cocoa powder
  • 50 ml oil
  • 100 ml sweet cream

To prepare the filling we will need:

  • 120 g butter or palmarin
  • 200 g of sugar
  • 100 ml rum
  • 200 g coconut
  • 6 egg whites

To prepare the icing we will need:

  • 150 g dark chocolate
  • 3 tablespoons of vegetable oil
    * jam (not necessary) – to coat the dough

How we will proceed:

1. In a bowl, beat the butter with the vanilla sugar, caster sugar and egg yolks. Gradually add oil, sweet cream, flour mixed with baking powder (or baking soda). Finally, stir in the cocoa and process well. Divide the processed dough in half and let it rest for at least half an hour in the refrigerator to make it easier to work with.

2. Then take the dough out, roll out one part of the dough and place it on a greased and floured baking sheet. You can brush with jam, but those who don’t like it don’t have to. It is best to use sour jam.

3. Prepare the filling. Beat the butter and sugar until foamy. Add the rum, coconut and beaten egg whites. Mix gently with a spoon.

4. Layer the filling on the rolled out sheet of pastry, cover with the second sheet of pastry and bake in a preheated oven at 200 degrees. Bake for about 20-25 minutes.

5. After baking, remove the cake and let it cool. Prepare the frosting. Break the chocolate into pieces and melt in a water bath. When you see that the chocolate is melting, gradually add the oil a teaspoon at a time and stir. Remove the melted chocolate from the water bath and let cool slightly. Pour over the cake and smooth it nicely.

6. Allow the frosting to set, cut into slices and serve.
