Chicken roulade with sun-dried tomatoes and bacon
What we will need:
- 2 pcs chicken breast
- 1 pcs mozzarella cheese
- dried tomatoes
- cherry tomatoes
- bacon
- 6 sprigs of thyme
- 1 red onion
- salt, black pepper
How we will proceed:
1. Wash and dry the chicken breasts. Slice so that we have large slabs. Pat the chicken through the bag, or run a rolling pin over the chicken to make them more spread out.
2. Season with salt and pepper on each side.
3. Lay the sliced mozzarella and sun-dried tomatoes on top of the breasts.
4. Add the fresh thyme leaves and roll into a roll.
5. Lay the bacon slices close together (fold over a little).
6. Place the rolled chicken breasts on top of the bacon and wrap in the bacon.
7. Place the bacon-wrapped chicken breasts in a baking dish.
9. Add whole cherry tomatoes, finely chopped red onion and a few sprigs of thyme.
10. Place in an oven preheated to 180 degrees and bake uncovered for 40 – 50 minutes.
11. Serve sliced with grilled tomato sprigs.
