Sponge cake with cream and tangerines

What we will need:


  • 5 eggs
  • 6 tablespoons crystal sugar
  • 5 tablespoons semi-coarse flour


  • 250 ml whipping cream
  • 300 g soft cottage cheese
  • 1 tin of mandarin oranges
  • 20 g gelatine
  • 4 tablespoons of icing sugar
  • 11 tablespoons water for the jelly

How we will proceed:

1. Start by separating the egg white from the egg yolk. Then whisk the egg whites into stiff snow. Mix the egg yolks with the sugar and flour. Then add the egg white mixture to the egg yolk mixture and whisk to form a smooth, foamy dough.

2. Prepare a cake tin by lining with baking paper.

3. Pour the batter into the tin. Bake at 180 degrees for about 25-30 minutes. Don’t forget to check with a skewer. Once baked and cooled, cut lengthwise into 2 parts.

4. Continue with the cream. Leave the gelatine to swell in cold water.

5. Next, whip the cream, then add the cream cheese and sugar. Beat well! Heat the gelatine in a saucepan a little and add it to the cream. Mix thoroughly again.

6. Now spread the cream on the first sheet of pastry and start adding the sliced mandarin oranges evenly. Then cover with the second sheet of pastry.

7. Finally, place the cake in the fridge for a couple of hours. Then you can decorate with icing sugar or coconut.
