Minced meat is an excellent dish for a normal day, but in our recipe you will find a tip on how to turn it into a meal for festive occasions as well. Our homemade meatloaf with herb stir-fry will charm everyone at the table and is guaranteed to be enjoyed.
Homemade minced meat, stuffed with herb fry
What we will need:
for the meat part:
- 1000 g minced pork (or a mix of minced pork and chicken)
- 4 cloves garlic
- 1,5 KL salt
- 1 KL ground black pepper
- 1 KL marjoram
- 1 tbsp mustard
- 2 pcs older bread (roll, bun, …)
- 200 ml milk
- 3 pcs eggs
- 6 tbsp breadcrumbs
- 2 tablespoons plain flour for dusting the board
for the fry:
- 2 tbsp butter
- 6 eggs
- 1 large onion
- 2 tbsp sour cream
- 2 handfuls of fresh herbs (chives, parsley, bear garlic, …)
- salt, ground black pepper to taste
How we will proceed:
1. Prepare a quick stir-fry: fry the finely chopped onion in butter until golden brown. Add the whole eggs and mix. Once they begin to have a firm texture, set the pan aside and add the sour cream and chopped herbs to the eggs. Season everything with salt and pepper.
2. Cut the old bread into cubes and pour over the milk.
3. In a large bowl, mix the minced meat with the crushed garlic, salt, pepper and marjoram and add the pastry pieces from which you have squeezed the excess milk in your hands.
4. Stir in the fresh eggs and gradually add the breadcrumbs (a tablespoon at a time).
5. Place half of the meat mixture on a floured board and layer the prepared herb fry in the middle. Cover with the other half of the mixture and shape into a roll. Carefully roll each side in the flour.
6. Transfer them to a baking dish and cover with a little water.
7. Cover them with foil and bake at 180 degrees for about an hour.
8. After an hour, remove the foil, cover with fat and bake uncovered until golden brown.
