Cheesecake with homemade biscuits
What we will need:
for homemade biscuits:
- 260 g plain flour
- 1 packet vanilla sugar
- 100 g crystal sugar
- 1,5 KL baking powder
- 200 g cold butter
- 4 pcs egg yolks
for the cheesecake filling:
- 500 ml whipping cream
- 200 g icing sugar
- 2 packets Golden cob
- 200 ml sour cream
- 500 g soft cottage cheese
How we will proceed:
1. In a bowl, mix the flour with the baking powder, sugar and vanilla.
2. Then add the cold butter cut into cubes and work into a fine crumb with your fingertips.
3. Combine the egg yolks of the dough into a single unit and refrigerate for 30 minutes.
4. Then divide it into two halves. Press one part into the bottom of a small, deeper tin (20×20 cm).
5. Roll the other half between two baking sheets into a pancake about half a centimetre thick (the shape doesn’t matter).
6. Bake both doughs simultaneously in a preheated oven at 180 °C for about 15 minutes. Let the filling cool while you prepare it.
7. Whisk the cooled cream with the sugar, golden cobs and sour cream until fluffy and finally stir in the cottage cheese.
8. Layer the filling over the cake in the tin, align and crumble the baked sheet on top.
9. Place the cake in the fridge for at least 4 hours, ideally overnight.
