Recipe for buttermilk cuts with mascarpone and chocolate

What we will need:

  • 500 ml buttermilk
  • 3/4 dcl oil
  • 2 eggs
  • 230 g semolina sugar
  • 350 g semi-coarse flour
  • 1 level tablespoon of soda
  • 3 tablespoons cocoa
  • jam (I had my mother’s homemade cherry-rhubarb jam)
  • 30 g grated dark chocolate

Cream:

  • 1 mascarpone
  • whipped cream 250 ml 33%
  • 1 tablespoon of icing sugar or more, to taste
  • 1 teaspoon of vanilla sugar with real vanilla from Kotanya

How we will proceed:

1. Whisk all ingredients in a bowl. 1. Pour it into either a classic half baking dish or a round cake tin 24 cm in diameter. Line the tin with baking paper.

2. Place in an oven preheated to 170 degrees and bake for about 45 minutes (if you are making on a baking sheet, 30 minutes is enough). Test with a skewer. When cool, cut through and handle with care! The shell is very fragile.

3. Cream: Whip the cream, then carefully whisk the sugars into the whipped cream. Just gently fold in the mascarpone! Careful the mascarpone would curdle!

4. Brush the shell with jam – to taste, cream and sprinkle with grated chocolate. Place in the fridge for a couple of hours.

5. Can be baked in a round cake tin. For a 24 cm cake tin, cut through twice. For the cake, I recommend making the cream from a double batch in the photo is the cream from the basic batch.
