The best poppy seed strudel made of yeast dough, cottage cheese and raisins!

A delicious recipe for a poppy seed strudel made with yeast dough:

What we will need:

Dough:

  • 500 g plain flour
  • pinch of salt
  • half a cup of granulated sugar
  • bag of vanilla sugar
  • zest of 1 lemon
  • 200 ml lukewarm milk
  • 2 egg yolks
  • slice of melted butter (80 g)
  • 3/4 yeast
  • half a tub of cottage cheese
  • handful of raisins

Filling:

  • poppy seeds
  • milk
  • lemon juice
  • sugar
  • a pinch of vanilla
  • 1 tbsp of coating

How we will proceed:

1. Start by making a sourdough starter with milk, a pinch of sugar and yeast. Work in the remaining ingredients for the dough and knead a nice, soft dough. Leave to rise for 40 minutes.

2. Once the dough has risen, divide it into 2 halves. Keep only one half and divide it further into 2 equal parts. Roll both out into a sheet.

3. Now the filling. Simply boil poppy seeds with milk, sugar, lemon juice, vanilla and a spoonful of coating. You should end up with a thicker porridge, like the one in the picture.

4. In the next step, we spread our poppy seed filling onto our individual sheets, just like in the picture. Twist and braid into a simple braid. Then we let it rise for a few more minutes.

5. Next, brush our braids with egg yolk mixed with milk. Bake at 180 degrees until golden brown. After baking and cooling, decorate with icing sugar. We are done!
