Step by step we present you a great biscuit made from egg whites. It will perfectly complement a cup of hot tea, cocoa or coffee. Not only children will love it, but also hungry adults. If you love to eat sweets and you are a passionate cook, you will be delighted with this novelty.
Recipe for a great bishop’s egg white sandwich:
What we will need:
Dough:
- 1 egg (separate yolk and white)
- 6 egg whites (about 190 g)
- 180 g powdered sugar
- 1 pinch of salt
- 160 g semi-coarse flour
- 70 g butter (melted and cooled)
- 1 pinch of baking powder or soda
- 160 g mixture of dried and candied fruit, almonds, nuts (hazelnuts and walnuts), raisins and chocolate (I put white and dark for cooking)
Icing:
- 120 g cooking chocolate
- 1 cm thick slice of butter
How we will proceed:
1. First, melt the butter and let it cool.
2. Heat the oven to 180 degrees and line a loaf tin with baking paper.
3. Then prepare the mixture – chop the nuts, almonds and chocolates or grate them in a food processor on a coarse grater.
4. Whisk all 7 egg whites with a pinch of salt, once whisked, reduce the power and beat in the sugar, then the egg yolk. Add the flour and baking powder and, for the very last time, lightly stir in the mixture of nuts, chocolates etc. with a spatula.
5. Put the dough into the tin and use a spatula to make the edges a little higher – the loaf won’t rise as much in the middle and will stay flatter.
6. Place in the oven and bake for 40 minutes (use a skewer to test for doneness). Once baked, remove from the oven and leave the loaf in the tin to cool slightly for a further 20 minutes. Then turn out onto foil and pour the prepared chocolate glaze over the top.
7. Melt the chocolate in a water bath, add the butter, preferably less so that the chocolate stays stiffer and doesn’t run down the sides.
8. Refrigerate until firm. Enjoy.
