Kefir cake with chocolate glaze: Quick, moist, and irresistible dessert

When you crave an honest, moist, and incredibly quick cake that’s ready for the oven in just a few minutes, there’s no need for complicated, time-consuming recipes. Forget about boring desserts – this moist cocoa kefir quick cake with a smooth batter and a rich chocolate-sour cream glaze is an absolute winner that will disappear from the table in no time. The secret to its success lies in the simple mixing of ingredients, kefir for extra fluffiness, and a perfectly creamy glaze.

What you’ll need for a small baking tray:

For the moist cocoa batter:

  • Kefir (or acidophilus milk): 250 ml
  • Powdered sugar: 250 g
  • Plain flour: 250 g
  • Egg: 1 pc
  • Vegetable oil: 9 tablespoons
  • Quality cocoa powder: 1 tablespoon
  • Baking soda: 1 tablespoon

For the creamy chocolate glaze:

  • Sour cream: 400 ml (2 cups)
  • Baking chocolate: 100 g

Step-by-step preparation:

1. Quick preparation of the cocoa batter: In a large bowl, combine kefir, powdered sugar, plain flour, cocoa, oil, egg, and baking soda all at once. Mix everything thoroughly—use a hand mixer on low speed to speed things up—until you get a perfectly smooth and slightly runny batter with no lumps.

2. Baking in the oven: Grease a small baking tray and dust it with coarse flour (or simply line it with baking paper for convenience). Spread the cocoa batter evenly over the entire surface. Bake in a preheated oven with fan at 160 °C (or with top/bottom heat at 180 °C) until done. Check doneness with a skewer—if it comes out dry from the center, it’s ready.

3. Magical chocolate-sour cream glaze: While the baked cake is cooling on the counter, prepare the creamy glaze. Melt the baking chocolate in a water bath or carefully in the microwave and let it cool slightly so it’s not hot (otherwise the sour cream would curdle). Then, in a bowl, thoroughly mix the melted chocolate with 400 ml of sour cream.

4. Finishing and chilling: Spread the cooled chocolate glaze evenly over the baked cake base. For the best flavor and to set the glaze, place the cake in the fridge for a while so the flavors blend perfectly.

Proven tips for a perfect result:

  • The role of kefir in the batter: The acidity of kefir reacts with baking soda, giving the cake incredible fluffiness and lasting moistness.
  • Temperature of melted chocolate: Make sure to mix lukewarm, not hot, chocolate into the sour cream to achieve a smooth, lump-free cream.
  • Chilling for best taste: The cake tastes great right after the glaze sets, but after an hour in the fridge, the creamy layer makes it even more refreshing.
