What You’ll Need

For the chicken stir-fry:

  • 600–700 g chicken breast, cut into thin strips,
  • 1 large onion, sliced into half-moons,
  • 2 cloves garlic, sliced,
  • 1 red bell pepper, cut into strips,
  • 1 small zucchini, sliced into half-moons, or a handful of frozen mixed vegetables,
  • 2 tbsp soy sauce or Worcestershire sauce,
  • 1 tsp sweet paprika or curry powder, to taste,
  • a pinch of chili, optional,
  • salt,
  • freshly ground pepper,
  • oil or ghee for frying,
  • parsley or spring onion for garnish.

For the crispy fries:

  • 800 g potatoes or quality frozen fries,
  • 2 tbsp oil,
  • salt,
  • sweet paprika or rosemary, optional.

For an optional quick dip:

  • plain yogurt,
  • garlic,
  • lemon,
  • salt.

Step-by-Step Preparation:

1. Preparing the fries: Preheat the oven to 210°C (fan). Cut the potatoes into fries, toss with two tablespoons of oil and salt, and spread in a single layer on a baking sheet. Add paprika or rosemary if you like.

2. Baking the fries: Bake the fries for 25–30 minutes until golden, stirring halfway through for even crisping. If using frozen fries, prepare according to the package instructions.

7. Final seasoning: Add a pinch of chili to taste and adjust with salt and freshly ground pepper. Remove the pan from the heat and stir in chopped parsley or spring onion.

8. Serving: Serve the chicken stir-fry immediately with hot, crispy fries. For a fresh dip, mix plain yogurt with garlic, lemon, and salt to taste.

How to Keep the Chicken Juicy and the Vegetables Crunchy

Slice the chicken strips thinly and sear them in batches. This keeps the pan hot enough for the meat to brown instead of releasing juice and stewing.

Stir-fry the vegetables for only 3–4 minutes over high heat. This way, the bell pepper and zucchini soften just slightly and remain pleasantly firm in the finished dish.

Easy Variations for Chicken Stir-Fry

For a honey-soy version, add 1 teaspoon of honey at the end for a glossy finish and gentle sweetness. For a creamy twist, stir in 2–3 tablespoons of cream or crème fraîche and simmer briefly.

You can also swap out the vegetables. In season, replace zucchini with green asparagus; in winter, use frozen peas or corn. The final flavor can be paprika-based, curry-style, or spicy.
