This meal is easy to prepare using just a pan and an oven. First, we sear the chicken pockets, finish them in the oven alongside the fries if needed, and use the pan drippings as the flavorful base for the sauce. If you like, you can combine white and brown mushrooms and finish the dish with a few drops of lemon juice.

What You’ll Need

For the chicken pockets:

  • 2 larger chicken breasts, ideally with skin or well-trimmed,
  • 4 slices of quality bone-in ham,
  • 100 g Brie cheese,
  • salt and freshly ground black pepper,
  • your favorite herbs, such as thyme or rosemary,
  • 2 tablespoons oil and a knob of butter for searing.

For the mushroom bed:

  • 250 g fresh mushrooms, or a mix of white and brown,
  • 1 small onion or shallot,
  • 1 tablespoon butter,
  • 150 ml heavy cream (31–33% fat),
  • a pinch of salt and pepper,
  • a few drops of lemon juice to taste.

For the steak fries:

  • potatoes suitable for fries or quality frozen steak fries,
  • oil,
  • salt.

The original recipe does not specify the exact amount of potatoes, oil, or salt for the fries, so adjust according to the number of servings.

Step-by-Step Preparation:

1. Preparing the steak fries: If making homemade fries, peel the potatoes or wash them thoroughly. Cut into thick fries, pat dry with a towel, and toss with a little oil.

2. Baking the fries: Spread the potatoes on a baking sheet lined with parchment paper so they roast evenly. Place in an oven preheated to 200°C and bake for about 30–40 minutes until golden and crispy. Salt just before serving.

3. Preparing the chicken pockets: Wash and thoroughly dry the chicken breasts. Using a sharp knife, carefully cut a deep pocket into each piece, making sure not to cut all the way through. Season the breasts inside and out with salt, pepper, and herbs like thyme or rosemary.

4. Filling the meat: Slice the Brie cheese. Place two slices of ham and half the cheese into each prepared pocket. Secure the opening well with toothpicks or a meat skewer to keep the filling inside during searing and baking.

How to Prevent the Cheese from Leaking Out

Don’t cut the pocket in the chicken breast all the way to the edges or through the bottom. Insert the filling deep enough and seal the opening tightly with toothpicks or a meat skewer. Turn the meat carefully so the sealed edge doesn’t open up.

Brie melts quickly when heated, so don’t overfill the chicken pockets beyond the recommended amount. Before serving, remember to remove all toothpicks or skewers.

How to Prepare a Creamy Mushroom Bed

First, sauté the mushrooms over high heat in the pan drippings, which will infuse the sauce with the flavor of the seared chicken. Add the cream only after the mushrooms have softened and released their aroma. A gentle reduction will thicken the sauce without the need for extra ingredients.

Add lemon juice just a few drops at a time, tasting as you go. Its purpose is to enhance the flavor of the mushrooms and cream, not to make the sauce overly sour.

Salt the fries just before serving so they stay crispy as long as possible. Serve the entire dish without unnecessary delay, as the mushroom sauce is best hot and the Brie inside the freshly sliced chicken pocket will remain delightfully melted.
