Ready in a few minutes and very tasty! This is today’s light cheesecake bubble with strawberries. It can be made with any seasonal fruit, but since I had some cottage cheese in the fridge that was running low, I had to come up with something quick. I chose this strawberry bubbly and let me tell you, it was delicious!

Light cheesecake bubble with strawberries
What we will need:
for the batter:
- 3 eggs
- 200 milk
- 200 ml oil
- 1 cup granulated sugar (250 ml)
- 2 cups semi-coarse flour (250 ml)
- 1 packet baking powder
curd filling:
- 1 cottage cheese
- 1 small egg
- powdered sugar
How we will proceed:
- Mix the dough (first the egg and sugar, then the liquid ingredients gradually, and finally the bulk ingredients) and pour it onto a baking sheet lined with baking paper. Place any fruit you like on top of the pastry (more acidic fruits are also good, in this case strawberries).
- For the cream filling, just mix the cottage cheese with the egg and sweeten to taste – you can also add 1-2 tablespoons of sour cream.
- Layer the curd filling between the fruit with a spoon. Place in a preheated oven and bake at 180 degrees for about 30-35 minutes. Done!
