Delicious “Raffaello cake” that tastes just like the balls from the store

Many of us enjoy indulging in the popular round treat known for its mild and delicate coconut flavor. However, instead of making frequent trips to the store whenever the craving strikes, why not try making a whole Raffaello cake at home? It will taste just as delicious as your favorite coconut balls. Simply use a 2.5 dl mug to measure out the ingredients.

What we will need:

For the dough:

  • 2 eggs
  • 1 cup sugar
  • 200 g cottage cheese
  • 1 teaspoon of baking soda
  • 1/2 teaspoon salt
  • 2 cups plain flour
  • desiccated coconut (for decoration).

Cream:

  • 3 egg yolks
  • 1 cup sugar
  • 3 tablespoons of semi-coarse flour
  • 500 ml milk
  • vanilla flavouring
  • 200 g butter

How we will proceed:

1. Mix the eggs and sugar and add the cottage cheese, baking soda, salt and flour from the cup to the mixture, mix or use a hand mixer. Add the cup of flour and mix. Set aside in the refrigerator for 60 minutes.

2. Prepare the cream: Mix egg yolks and sugar, add flour and milk and begin to cook, boiling and stirring with a whisk or electric mixer.

3. Stir for a while, and when the mixture starts to boil, remove it from the heat, flavour with vanilla flavouring and leave to cool. Stir in the butter and cream.

4. Remove the dough from the refrigerator and divide it into six equal parts for 6 baking sheets. Preheat the oven and bake for a few minutes on each baking sheet until the shells are slightly coloured.

5. Brush the shells with the cream and stack them on top of each other, sprinkle with coconut. Leave them in the fridge for a few hours and then slice them.
